Week in Snapshots

The perfect summer salad- fresh strawberries, arugula, pecans, and crumbled goat cheese.
All tossed in a sweet poppyseed dressing.

This week's baking experiment- baked oat bars. I added dried cranberries, dark chocolate chips, and sunflower seeds. Recipe here.

Devoured some homemade guacamole with blue corn chips.

Sampled olive tapenade with salt, pepper, and thyme potato chips at the farmer's market.
Yum!

Also from the farmer's market- fresh, tart blackberries. We took home a pint for breakfast!

Enjoyed yummy and light lobster sliders at a weekend cookout, a great recipe here.

Iced passion tea from Starbucks is hands-down my go-to summer drink. Perfect!

Hey it's ok...

Even Kate Middleton has some not so glamorous moments

Inspired by Glamour's "Hey it's ok" articles, I came up with a few myself:

Hey it's ok

...to decide that after several strong gusts of wind you need to change from your dress into jeans


...to use men's shaving cream because it's cheaper (plus it works just as well!)


...to smirk when you can run faster and longer than the cute guy next to you at the gym


...to let your phone go to voicemail so they won't be able to tell that you just woke up


...to spend several hours on pinterest and still feel like you accomplished something


...to run for three minutes and call it a workout. You wore spandex. Mission accomplished.

Decisions, Decisions...

My WAY overdue haircut is this Wednesday and like I always do before each haircut, I have spent several hours on google, searching for the perfect haircut! My hair is now the longest it has ever been and I am completely torn between a trim and a bob. The two photos I will be taking in for my hairstylist to choose from (because I can't make the decision) are these:

Sunshine Pie

I decide to name this creamy lemon pie, "Sunshine Pie" just because it is the perfect summer dessert. Not to mention it is incredibly delicious! I have made it three times in the past five days. And although it may taste amazing it's pretty healthy dessert as well!


Ingredients:
-6 Reduced-fat cinnamon graham crackers
-2 Tbsp. salted butter
-11 oz. fat free sweetened condensed milk
-2 large eggs
-1/2 cup fresh lemon juice
-1 Tbsp. lemon zest

Instructions:
  • Preheat oven to 350ºF.
  • Grind graham crackers in a food processor until fine crumbs form. Or place crackers in a resealable plastic bag and crush with a rolling pin. Place crumbs in a small bowl.

  • Melt butter on stove top or in microwave and pour over graham cracker crumbs, mixing with a fork until completely moistened. Press crumbs evenly onto bottom of a 9-inch pie pan; place crust in refrigerator while preparing lemon filling.
  • In a medium bowl, combine condensed milk and eggs; mix until smooth. Add lemon juice and zest; stir until incorporated and pour into prepared crust.
  • Bake pie for 15 minutes. Cool completely and for best flavor, serve chilled. Yields 1 piece per serving.

4th of July

Well it certainly has been a long time since I last posted, so happy belated fourth! Hope everyone had a fun and relaxing day off. We spent our day by the lake, enjoying the sun and eating some great food at a BBQ. To start off the festivities we had a red, white, and blue breakfast at home!
